Plans for a Cooper's Hawk Winery & Restaurant, a national chain of sit-down restaurants with its own wine club, have been filed with the state for a site at Gates of Prosper.
A project the state's licensing agency, TDLR, logged Monday, Oct. 5, calls for ground-up construction of a freestanding, one-story restaurant of 12,111 square feet, along with a 652-square-foot service yard and a 1,150-square-foot outdoor patio. The estimated cost is $5,089,910.
The filing places the building on Lot 3B of Block B in Gates of Prosper but does not give a street address. Construction is penciled in from March 27 to Sept. 30, 2027. Filings like this one go to the agency for an accessibility review, so the schedule and dollar figure are the applicant's estimates and may shift.
The property owner is listed as GOP #3 LLC, with an address at 1 Cowboys Way in Frisco. Aria Group Architecture of Oak Park, Illinois, is the design firm. The record says the project is privately funded and that the tenant is not paying for the construction.
A first in Texas
Cooper's Hawk's website lists more than 80 restaurants, most of them in Illinois and Florida, along with Ohio, Virginia, Missouri, Michigan and Arizona. None of the open locations or the five listed as coming soon are in Texas, and the chain has not announced a Prosper opening on its site.
